- 150 g almond meal
- 150 g unsalted butter
- 25 g Coconut Flour
- 100 g Shredded coconut
- 3 eggs
- 300 g mixed berries
- 1 tsp ground cinnamon
- 2 tsp Vanilla Paste

TM 5Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
Preheat oven to 180°C, grease and line a slice tin with baking paper (mine is rectangular, approx 30x20cm).
Add almond meal, butter and coconut flour , 20 secs, speed 4.
Add one egg, 1 tsp vanilla paste, 1 tsp cinnamon , 5 seconds speed 4. Press the mixture evenly into the prepared tin and bake 15 minutes or until golden.
Remove from oven and let cool slightly. Clean & dry TM bowl.
While the base is in the oven, prepare the filling:
Place berries into , puree 5 seconds, speed 7. Scrape the bowl with spatula and repeat until smooth.
Put aside in a bowl and rinse TM bowl.
- Add shredded coconut, two eggs and 1 tsp vanilla paste , 10 seconds sp.1 or until just combined. Set aside.
Spread the berry puree on top of the cooled base.
Add topping (press slightly).
Return to the oven for 30 minutes.
Cool and cut into pieces.

The base mixture is quite sticky, using a spatula dipped in water helps (or wet, but clean, fingers)
