Tortenboden (Tort Crust)

Tort crust

  • 140 g unbleached flour
  • 1/4 tsp salt
  • 1 1/2 tbsp baking powder
  • 3 eggs separated
  • 200 g sugar
  • 115 g hot milk (1/2 cup)
  • 60 g unsalted butter (room temperature) 1/4 cup in cubes)
  • 1/2 organic lemon zest and juice

Recipe's preparation

    Prepare tart crust pan / flour mixture / preparation
  1. Butter tart crust pan and dust with flour.

  2. Prepare batter: egg white
  3. Add room-temperature egg whites to dry TM bowl and beat with butterfly until fluffy, 1 minute 45 seconds, speed 4.

  4. Prepare batter: egg mixture
  5. Beat the egg yolks in TM (second TM bowl if you have) to combine then gradually add 100g of the sugar and beat until frothy, 1 minute, speed 5.

    Add the hot milk, the remaining 100 g sugar, and butter, lemon juice, lemon zest, 30 seconds, speed 5.

    Add flour mixture to TM, 30 seconds, speed 4.

  6. Incorporate egg whites into batter
  7. Either:  gently fold egg whites into batter 1/4 at a time


    Add batter to egg whites, gently Gentle stir setting stir with butterfly 30 seconds, gently scrape any egg white on butterfly and sides into the batter continue Gentle stir setting 30 seconds more.


    Pour into tort crust pan, bake 25-30 minutes.


    Let cool on wet towel 20 minutes.
