Vanilla Sponge Cake

7 inch round cake (3 inch height)

  • 260 g unsalted butter, room temperature
  • 260 g caster sugar
  • 4 eggs, room temperature
  • 1 teaspoon baking powder

Recipe's preparation

  1. 1.Preheat Oven 160 degrees. Grease and Line 7 inch round cake tin with baking paper.

  2. 2. Insert the butterfly and butter, caster sugar and seeds from vanilla bean. Mix 3 minutes/Speed 4 or until pale in colour and fluffy.

  3. 3.Leave butterfly in. Mix on 1min/Speed 2 add the eggs one at a time (about every 15 secs). **Dont be alarmed if the mixture curdles slightly, this can be fixed by adding some flour.

  4. 4. Add flour and baking powder. Mix on 2mins/Speed 3 or until combined.** Pause mixing half way and using spatula scrape down the sides of the bowl and around blades. 

  5. 5. Pour into lined tin and bake for about 1 hour. ** Add 1 cup of water in a second tray in the oven to create increased humidity in the oven.
