Cheese and Bacon Lunchbox Muffins

  • 200 g Vintage Cheddar Cheese Cubed
  • 200 g bacon
  • 1/2 onion
  • 1 tsp Stock Concentrate, Veggie or chicken
  • 250 g Milk
  • 345 g plain flour
  • 1 tsp bicarb
  • 20 g olive oil

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Easy Kids Lunchbox Filler
  1. Place cheese into bowl. Grate 5 secs Speed 7  set aside

     

    Place 1/2 onion. Chop 2 secs Speed 5

     

    Add 200g bacon. Chop 8 secs Speed 4

     

    Add 20g Olive Oil, 1 tsp stock. Cook 3 mins Temp 100c Speed 1

     

    Add 250g milk, 2 eggs  Mix 5 secs  Speed 4

     

    Add grated cheese, plain flour, 1 tsp baking powder

     

    Mix 5-10 secs Speed 5 until just combined

     

    Spoon into muffin moulds

     

    Bake 20 -25 mins 180c oven

Tip

Store in freezer. Remove in the morning and they will be ready to eat by school lunch time

    Easy to make. They were great sliced in half with some butter. Needed a little more flavour to accomdate the whole family. So may add a little chilli or herbs next batch
