Quick Gluten Free Bread Rolls

  • 100 g Raw Buckwheat
  • 300 g water
  • 2 tsp dried instant yeast
  • 20 g olive oil
  • 420 g Laucke Gluten Free Bread Flour, (See picture)
  • 1 tsp xanthan gum
  • 1 tsp salt

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add buckwheat to jug a mill 15 sec/Sp 9. Leave milled buckwheat in jug.
  2. Add water to jug then sprinkle dried yeast over water. Heat 2 mins/37°C/Sp 1
  3. Add olive oil, Laucke Gluten Free Bread Flour, xanthan gum, and salt and mix 6 sec/Sp 6 then knead 2 mins/Dough mode
  4. Transfer dough to ThermoMat. If dough is too sticky then sprinkle with more gluten free flour & work in by kneading with your hands. Wrap in ThermoMat & leave to prove for 20-30 mins in a warm spot
  5. Once dough has risen, divide into 12 equal segments & shape into round rolls. Place on baking tray lined with the baking ThermoMat or baking paper. Brush each roll with water & sprinkle with poppy or sesame seeds.
  6. Place rolls into cold oven and set temperature to 200°C. Bake rolls for 20-30 minutes.
