Cherry Ripe Slice

Ingredients

Chocolate Base

  • 100 g almonds
  • 100 g Macadamia Nuts (raw)
  • 10-12 Medjool dates, seeded
  • 20-30 g Cacao Powder (raw)
  • pinch of salt to taste

Cherry Centre

  • 200 g Shredded coconut
  • 100 g dried cherries
  • 1 tsp Vanilla Paste

Chocolate Topping

  • 50 g coconut oil
  • 20 g cacao powder
  • 20 g Honey or Maple Syrup
  • 1/2 tsp Vanilla Paste

Recipe's preparation

  1. Base:

    Add all ingredients to bowl. Process 15-20seconds/speed 9. Press into loaf tin or rectangle dish (can be lined with baking paper if you wish). Place in freezer while you do the next step.

     

    Cherry Centre:

    Add all ingredients to mixer bowl. Process 15-20seconds/speed 9. Take base out of freezer and press cherry layer onto base. Return to freezer for at least 15 minutes.

     

    Topping:

    Add all ingredients to mixer bowl. Warm for 2minutes/speed 2/37 degrees. Once base and cherry centre are chilled, pour over chocolate topping. Having the base layers chilled will help stop the chocolate layer from separating. Place slice in fridge and chill until chocolate layer is set. Slice into small pieces and enjoy.

Tip

 

You can use the base of a flat bottomed cup to help press your slice down firmly and smoothly. It may help to have a piece of baking paper between the slice and the cup to do so.

Apologies if these amounts aren't exactly accurate as I always just guess my recipes but it should work. If you find any layer is too wet, too dry or not the consistency you think it should be, feel free to add more nuts/dates/cherries/time to the recipe. You can also add a little coconut oil to the layers if they are a little dry.
