Chocolate delight cake

Ingredients

Cake mix

  • 250 g dark chocolate
  • 250 g Copha
  • 1 espresso shot, or 80g strong coffee
  • 2 eggs
  • 45 g caster sugar

Fillings

  • 1/2 Packet plain sweet biscuits
  • 200 g Marsipan, (optional)
  • 1-2 Packs Jelly tops

Recipe's preparation

    Chocolate Delight Cake
  1. Break up the chocolate and add to the Thermomix bowl. Chop the Copha and add to the bowl.

    Melt at 5min/60 degrees/Speed 1-2

    Add espresso, and mix for 20 sec/speed 3 or until the mix is smooth and without any lumps. Set aside

  2. Clean and dry your bowl

    Attach the butterfly whisk

    Add eggs and sugar and beat 3min/speed 3 or until a fluffy consistency is achieved. 

    With the butterfly still in place, set to speed 1. Start pouring the chocolate mix through the hole in the lid, keep mixing until just incorporated.

  3. Grease and line a small loaf tin with non-stick baking paper

    Pour enough chocolate mixture into the tin to just cover the base.

    Place one layer of sweet biscuits on top of the chocolate mixture.

    Add enough chocolate mix to cover the biscuits

    If using, cut Marsipan into 5mm disks and place over the chocolate approximately above where the biscuits are placed.

    Add another thin layer of chocolate mix

    Scatter jelly tops randomly over the surface

    Add enough chocolate mix to cover the jelly tops 

    Place another layer of sweet biscuits along the middle, and cover with the last bit of chocoalte mix.

    Top with remaining jelly tops or other sweets if you wish.

    Place in the fridge to set completely

    To serve cut thin slices as needed.

Tip

Square or rectangular biscuits are the best to use.

For some extra decadence, add a little splash of your favourite liquor to the chocolate mix (when adding the espresso)

You can also add some walnuts to the cake or on top to decorate. 

Wrap the cake firmly in clingwrap and store in the fridge.
