Healthy RAW Carrot Cake Pops - Gluten / Dairy / Egg / Vegan friendly

Ingredients

30 piece(s)

Cake "Batter"

  • 150 g rolled oats
  • 150 g carrots, in chunks
  • 40 g Coconu oil, Or flax oil
  • 30 g agave syrup, or honey
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 60 g sultanas

Extra Special Pops

  • CHOOSE ONE OF THE FOLLOWING
  • chia seeds and oat mixture, to coat
  • molten chocolate, to coat
  • Shredded coconut, to coat

Recipe's preparation

    Cake Pops "Batter"
  1. Blitz the oats & carrots for 2 seconds on speed 6.

  2. Add the rest of the ingredients to the bowl

  3. Mix for 10 seconds on speed 4 then increase to 6 for 2-3 seconds

  4. Either leave them in the Thermomix bowl or Transfer to a container or bowl and leave in the fridge or bench for 10 minutes. You can shape them right away, but letting them rest gives it time for the mix to become less sticky. 

  5. Roll Carrot Cake Pops
  6. Use a tablespoon to get consistent amounts of mix.

  7. Roll into small balls

  8. Pack as part of a balanced lunch. For smaller children 1 or 2 is enough,  or for older kids up to 3

  9. If you are having them at home or for a party then pop blunt skewers or plastic sticks into them to make them cake pops. 

  10. For a really decadent treat you can coat them in chocolate for a party. But I prefer the un-iced version

  12. Melt chocolate chips according to the EDC instructions, Or roll in chia seeds snd oats as pictured. 

    Gluten / Dairy / Egg / Vegan friendly. For Paleo option substitute Oats for Coconut Flour or Coconut & roll in coconut and / or chia seeds.

Tip

You can easily double the recipe. But I prefer to make one batch of these and one of my "raw cookie dough" bites at the same time.
