Salted Caramel Maple Ice Cream

  • 300 g raw sugar
  • 50 g 100% Maple Syrup
  • 50 g unsalted butter
  • 2 heaped teaspoons natural vanilla extract
  • 2 tsp sea salt
  • 500 g cream
  • 100 g full cream milk
  • 4 eggs
  • 150 g dark chocolate, chopped (optional)

Recipe's preparation

  1. Place sugar into TM bowl and pulverise for 10 secs/speed 9.
    Add Maple Syrup, butter and vanilla and cook for 15 mins/Varoma temp/speed 1.
    Add salt, cream, milk and whisk together for 30 secs/speed 5.
    Reduce to speed 4 and introduce eggs one at a time into the hot mixture as the blade rotates.
    Cook a further 5 mins/100°C/speed 4.
    Pour into cold metal tin and freeze.
    After 2-4 hours when partially frozen, remix for 1 min/speed 5-6 to give a creamier
    consistency.
    Fold through chocolate chunks after remixing on Counter-clockwise operationspeed 1 for a few seconds.
    Pour into cold tin and freeze for up to 12 hours before serving.

    Taste was great but the texture wasn't right. The caramel seemed to split in the freezer and it took around 48 hours to set for me in my thermo.

    Very indulgent and delicious. I used mostly 70% chocolate and some 85%. If using dark  chocI would recommend grating it instead of using chunks as the contrast of very bitter to the very sweet icecream wasn't as enjoyable. The bits of ours that was grated was much nicer. I would also receommend not over doing the portion size as its very sweet.

    Can I use fresh Vanilla or selfmade Vanillasugar? If yes, how much? Don´t know what the taste difference is because I never had it!

    The first real ice cream I made in my Thermomix and a big hit with the family. Wasn't a fan of the choc bits but it may have been the chocolate I used as it went very hard. Looking forward to making this again.

    Help! The scales somehow did not measure the cream correctly - and I put in 600gms cream and 70gms of milk without realising and I have it already mixing on the final 5 mins. Is there anyway I can thicken it? Or is it going to end up a runny puddle :( Was really looking forward to this :(

    I made this on the weekend.  I froze mine in my Thermoserver and it did take over 24 hours to freeze.  For an alteration, I added 70% dark chocolate chips into the mixture.  For our personal taste, next time I will use less salt. I will use half or maybe even quarter the salt quantity.  It was very yum and I will definitely be making this again.

    I halved the sugar and it was still super sweet.  Like most posters I notice it took much longer to freeze than other ice creams I've made.   Make it 2 days in advance for best results.  Otherwise - LOADS of positive comments.

    I made this to share with friends, and it is absolutely fantatic!  I used Himalayan rock salt and the salt flavour was quite intense, so I think I'll use less next time.  My icecream took more than 12 hours to set, I made it on Friday night to serve on Saturday night.  Utterly gorgeous, decadent deliciousness.
