Ingredients
Rush Family "Sushi"
- 400 g Sushi Rice
- 1000 g water
- 1 tsp salt
- 2 tsp sugar
- 3 tbsp rice wine vinegar
- 500 g chicken breast
- fresh or frozen vegetables
- Cookidoo® Teriyaki Sauce
- Cookidoo® Kewpie Mayonnaise

- Weigh water into mixing bowl.
- Insert simmering basket. Weigh in rice then mix 15 sec / speed 3.
- Add Varoma® dish. Weigh chicken breast. Add Varoma® tray and add veggies of choice. Steam 20 min / Varoma / speed 4.
- While steaming, place rice wine vinegar, sugar and salt in a small bowl and stir until grains are dissolved.
- Remove simmering basket using spatula as handle and tip rice into Thermomix® Server. Add vinegar mixture and gently stir to combine.
- Check chicken (it’s a good idea to turn it over here) and veggies and cook a further 5 min / Varoma® / speed 4.
- Add vegetables to a Thermomix® server to keep warm. Discard water from mixing bowl.
- Add cooked chicken to mixing bowl. Shred 2-4 sec / reverse blades / speed 4. Add chicken to Thermomix® server with veggies.
- Serve with teriyaki sauce, kewpie mayonnaise, sesame seeds and spring onions.
Tip
Notes: Cookidoo® Teriyaki Sauce- I halve the water to 100g and increase the cornflower to 4tsp as prefer thick sauce
- I pull the sugar down to 100g due to decreasing the amount of liquid
- I use FreeFOD garlic powder or garlic infused oil as a sub for garlic cloves to make it low FODMAP
Notes: Cookidoo® Kepwie Mayonnaise
- I halve the recipe as we don’t get through a whole batch in the time it keeps for
- I use rice bran or sunflower oil as a sub for grapeseed oil as they’re cheaper and I prefer the taste (I do this for my cooked mayonnaise too).

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
