Brioche
- 250 grams Milk
- 1/2 level tablespoon Yeast
- 2 eggs
- 20 grams sugar
- pinch salt
- 450 grams bakers flour
- 120 grams Butter
Beef Patties
- 500 grams Beef mince
- to taste Tabasco sauce
- 1 tablespoon ketchup
- salt and pepper to taste
Big Mac Sauce
- 1/2 --- cup mayonnaise
- 1/4 Cup Ketchup
- 2 teaspoon Dijon mustard
- 1 --- Large Dill pickle/cucumber
- 1/4 small onion
Fillings
- Extra Sharp Chedder Cheese
- Lettuce

Brioche
Warm the milk and butter at 37 degrees for 4 minutes and speed 1. Butter should be melted prior to adding yeast. Add yeast, sugar, eggs, salt and mix 10 seconds sp1. Add flour, mix 7 seconds speed 5, then knead for 6 minutes or until dough in sticky and glossy.
Turn into an oiled bowl and cover with cling wrap. Place in a warm spot and allow dough to double in size.
Once doubled split into your burger bun rounds. I like to use pie tins to make mine. I find 120gms dough to be the perfect amount.
Cover buns with cling wrap or a tea towel and allow to double in size.
Brush with egg wash and sprinkle with sesame seeds. Bake at 180 for between 10 and 20 mins or until buns are golden brown and hollow sounding when tapped.
Sauce:
Blitz pickles and onions for 5 secs speed 7. Add all ingredients to a bowl and mix. Set aside in fridge for at least 2 hrs prior to using. (This helps the flavour develop)
Patties:
Place mince and sauces in bowl and mix for 10 sec speed 5. Divide into 4 large balls and flatten out to make patties. Cook in a hot frying pan and season with s and p while cooking. I like to place a generous amount of grated chedder on top of the patties while still in the pan and allow it to melt on. Yummmmm

Tip
Before frying the patties I like to cut my buns in half and drizzle with evoo and toast in the pan.

So good, the buns were the best brioche buns ever.....the sauce is to die for, make sure you use a good quality mince as this makes the beef patties.....

I’m to lazy to make the buns and by Brioche buns however the rest is amazing!! My husband loves and I’m crazy about the sauce! Made twice in one week and the tip is the sauce must rest for at least 2 hours!!!

We didn't like the bread
We didn't like the bread much, but the sauce was a big hit with hubby - he insisted on eating the left over sauce the next day on his mashed potatoes! (surprisingly it tastes great on the spuds).. The burgers certainly looked good and tasted fine but we probably won't make the bread again. The sauce however will be made regularly in this household.

I didn't make the bread, but everyone loved the sauce in the burgers. In fact, my 3year old actually finished a meal for once, And even requested I make it again! Hooray! Will definitely be making this again.
I have never made brioche
I have never made brioche buns before, so do t know what the dough is supposed to be like. The dough for this was extremely wet (like a thick pancake mix) so I added a out 1/2 cup extra flour which made it a sticky dough.

from the store again - it was too easy A tip for working the dough into balls for baking - put a little oil on your hands

Hi lucyloo, brioche is definitely a denser bread however it does sound like you didnt proofed long enough. As a guide i alway let the dough double in soze if not triple. Hope that helps!

I am new to thermomix. thank you for the recipe. the patties and sauce were nice but my brioche turned out more like a damper. certainly not hollow when tapped. Not sure what went wrong? How long do you need to let the dough sit?
