Made this last night, and found it really simple, authentic tasting and delicious!

Couple of suggestions for the people confused about some things:

Chicken stock -- I used a heaped tablespoon of Chicken Stock Paste, and added boiling water to top up to 400gm, this was PERFECT, try that!

Chicken -- we sliced the 4 breasts in half, down the middle (Imagine butterflying, but going all the way) and they were the perfect thickness, we made 8.

Curry powder -- I used Babas

  • I really enjoyed this dish served as suggested...

    Submitted by Maz82 on 26. January 2017 - 19:15.

I really enjoyed this dish served as suggested with rice and crumbed chicken. One comment had mentioned mayo also served with the chicken and this was a great addition!

    A couple of things,

    1. I found the 400g chicken stock VERY difficult to interpret. I used 250g of ECB concentrate stock with the rest made up of water. This was clearly a mistake because it was so salty it was inedible. I had to add 2-3 tall glasses of water to the mixture to reduce the salt taste, but then this resulted in a very runny sauce. If making again I would use about 2 tablespoons of ECB concentrate vege stock and make the rest of the 400g with water.

    2. The timeframes are also a little misleading. This sauce and also the chicken actually took quite a bit longer than the time stated.

    Thanks for the recipe!

Can someone please let me know how they changed the chicken stock out for the veggie stock? I was wary that it might be very salty so I only put 250g instead of the 400g with some water as well. Sauce was a good consistency but very salty!

Made this for the 2nd time tonight. Didnt have honey so sub with coconut sugar, also used babas curry powder which gave it a nice depth of flavour. Thought using honey last time made sauce a little too sweet for my liking. Family and I loved it tonight!! Thanks for a great recipe without all the nasties  Party

    Submitted by adawson on 11. August 2015 - 14:25.

Holy snap now! I never need to buy this again! I thought I'd be clever and use 3 tsp of curry instead of 2 because I like a bit of a kick, but it was probably a bit much. I probably could have used a bit less garam masala if I wanted to use 3tsp of curry powder and it wouldn't have been so peppery. Otherwise amazing.

I didn't make the chicken, just the curry sauce.

this recipe has become a regular meal in our family, my boys love it.  Sometimes I replace one of the carrots with a small sweet potato, also yummy.  We also do it with crumbed tofu triangles, nice if you're veggie or don't like chicken.  Thank you so much for posting this recipe, way better than the packet and tinned katsu/japanese curry sauces out there.

i made this as a surprise for my husband, who loves Wagamamas Chicken Katsu Curry, and he immediately made a comparison and loved this version.

I had read the comments, so added the stock at the Garam Masala stage, everything else exactly as per recipe and can't wait to make it again. A massive hit with the kids as well.
