Chicken & Lemon Tagine

Ingredients

  • 4 cloves Galric
  • 2 teaspoons sea salt
  • 1 tablespoon ground cumin
  • 1 tablespoon turmeric
  • 1/3 --- cup EVOO
  • 1 lemon, juiced and zest
  • 8 chicken drumstick, skin on, or Chicken thighs
  • 1 onion quartered
  • 1 Zuccchini, sliced
  • 2 tomatoes quartered
  • 1 tablespoon TM stock paste
  • 250 grams chicken stock
  • 250 grams pearl couscous, or normal couscous
  • 10 olivies, optional

Recipe's preparation

    Preparation:
  1. Place garlic, salt, turmeric, cumin, 3 tablespoons of the oil, lemon zest and juice into mixing bowl and chop 5 sec/speed 8 

  2. Describe the preparation steps of your recipe

  3. Place chicken and the lemon garlic spice paste in a large snap-lock bag and massage to ensure all chicken is coated.

    Place the remaining olive oil in the tagine base over medium-high heat. with the left over lemon( only for taste) Add the chicken pieces, skin side down, and cook for about 3 minutes without turning or until they are a lovely caramel brown.

     

     

  5. Turn the chicken over and pour in the chicken stock, Add Onion, zucchini, tomato, olivies. or any other veg you would like. Bring to the boil then reduce heat to low. Place the tagine on a heat diffuser if you have one, to ensure a very low heat. Alternatively, place the tagine in an oven pre-heated to 160°C. Cook for 40 minutes.

    Remove tagine lid and carefully lift the chicken pieces one by one and scatter the couscous around and under them. Turn off the heat.

  7.  

    After 5-10 minutes the couscous will swell and be ready. Remove lemon quarter for serving. 

     

    Scatter parsley over the tagine and serve to the table with some crusty bread.

Tip

 Thigh fillets can also be used but reduce the cooking time by 15-20 minutes.

If a tagine is not available, a large frypan with fitted lid will work.

    This was delicious! As I don't have a tagine, I browned the chicken in a frying pan, transferred it all to a glass baking dish and covered it with foil. I might marinate the chicken for a bit when I try it next time, and there will definitely be a next time.

    this was good but with the salt and the olis it made it a bit too salty. will make it agan but with les salt.
