Chunky Bolognaise Sauce

Ingredients

Sauce

  • 1 brown onion
  • 2 clove garlic
  • 30 g olive oil
  • 150 g tomato paste
  • 400 g Crushed or diced tomatoes
  • 100 g water
  • 15 g vegetable stock concentrate
  • 500 g mince, Beef, Lamb, or Pork
  • 1 bay leaf
  • 3 sprigs basil
  • 50 g Parmesan cheese, to serve

Recipe's preparation

    Sauce
  1. If using Parmasan for serving place it into the Mixing Bowl and grate on speed 9 for 10 seconds. Scrape out and set aside.

    1. Add peeled Onion and Garlic to the mixing bowl and chop for 3 seconds on speed 5. Add Olive Oil and Saute for 3 minutes, 100 degrees on speed 1.

    2. Scrape down the sides of the bowl and add Tomato Paste, Crushed Tomatoes, Water and Vegetable stock. Cook for 5 minutes, 100 degrees, Reverse Speed 1.

    3. While cooking break up your mince and add to the simmering basket. Pour a small amount of the sauce to your empty tomato tin. Add Basil and Bay Leaf to the mixing bowl and insert simmering basket and pour the small portion of reserved sauce over the mince in the basket and cook for 15 minutes, 100 degree's on Reverse Speed 1

    4. hook your Spatula onto the side of the simmering basket and tip the mince into the sauce in the mixing bowl. Cook for a further 5 minutes, 100 degree's, Reverse speed 1.

    Once cooked set aside in Thermoserver then add your water and cook pasta as required for a bolognaise or pasta bake, otherwise you can cook it on the stove top while you Thermomix is making this recipe. OR set aside and make bechamel sauce in your Thermomix and assemble a Lasagne.

    This technique of cooking mince can be usedfor bolognaise, lasagne, pasta bake, shepherds pie, meat pies. Just utilise the simmering basket and adjust the ingredients and cooking times as required.

    PLEASE ENSURE THERE IS ENOUGH LIQUID IN THE SAUCE TO STEAM YOUR MINCE IF YOUR USING THIS TECHNIQUE FOR OTHER MINCE DISHES.

    To add hidden veggies like Zuchinni, Carrot, or Pumpkin simply add desired amount with the Onion and Garlic in Step 1.

    YUM this is definitely a new family favorite for spag bol, the chunkiness of the meat and sauce is amazing and you actually taste all the ingredients
