Coconut Chicken Curry

Ingredients

Curry

  • 3 cm piece of ginger, peeled
  • 3 cloves garlic
  • 1 onion, peeled and halved
  • 1 chilli
  • 1 Medium Capsicum, chopped
  • 50 gram oil
  • 1.5 tsp paprika
  • 1.5 tsp cumin
  • 1.5 tsp tumeric
  • 200 gram pumpkin, peeled and chopped in 2cm pieces
  • 500 gram chicken (breast or thigh), cut into 3cm pieces
  • 200 gram baby eggplant, chopped into bite sized pieces
  • 1 tsp sugar
  • 1.5 tbsp soy sauce
  • 1.5 tbsp fish sauce
  • 400g can coconut cream
  • 200 gram peas

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. 1. Place ginger in TM bowl - chop 5 sec / spd 7

    2. Add garlic, onion, chilli and capsicum - chop 3 sec / spd 7

    3. Scrape down sides of the bowl

    4. Add oil and dry spices - saute 5 min / Varoma / spd 1

    5. Add pumpkin, chicken, eggplant and sugar - cook 5 min / Varoma / Counter-clockwise operation / Spd 1 or Gentle stir setting. Leave the MC off.

    6. Add soy sauce, fish sauce and coconut cream - cook 15 min / 100C / Counter-clockwise operation / Spd 1 or Gentle stir setting. Leave the MC off.

    7. Check that pumpkin is cooked to your liking, if not, cook for another 2-5 min / 100C / Counter-clockwise operation / Spd 1 or Gentle stir setting. Leave the MC off.

    8. In the last minute add 150g peas through the hole in the lid.

    9. Let the curry rest for 10 minutes (or so) before serving. Use this time to cook the rice.

Tip

Use any vegetables that you like, simply cut them small enough to cook in 15-20minutes.

Add some roughly chopped almonds or cashews when serving for a little extra crunch!

Serve with greek yoghurt on top.

Use less chili or no chili if you prefer.

Make this a vegetarian meal by swapping out the chicken for a combination of vegetables.

We cooked up 200g of rice & that was enough for 5 servings.

    this was really good! very easy to make! i didnt use eggplant, i just left it out. I added mushrooms instead. I also added small broccoli florets through the lid at the halfway cooking point. will definitly make again! family loved it.

    Love this. First time cooking realised i didn't have coconut cream so substituted with full cream and a big handful of desiccated coconut and it was still yummy 😊 Also added a touch of curry powder.

    Loved this. I didnt have any chicken so used a bigger eggplant, pumpkin, carrot, chickpeas, and added broccoli in last few minutes. Actually glad hubby didn't like it  (hates chickpeas) so i can eat it all myself!

    Yum yum I added extra chilli as we love it, replaced veggies with carrot and beans and added blitzed macadamias at end. Had to add some conflour to thicken a little more as as still runny and I doubled the quantity of all ingredients but only used 500mls of coconut cream. But once cooked OMG this was so tasty and we loved it.

    I've only had my thermomix for 2 nights and I was so excited to try this recipe. It was simple and delicious, but we found it lacking in a little heat but that's just personal preference :) But, having said that, my 9 month old loved it! Will be making this again but adding an extra chilli and maybe a bay leaf and a little lemon grass.

    Absolutely delicious!I made a few changes based on what I had in the pantry. Only had 270ml light coconut milk + 100 ml normal milk and a handful of desicated coconut. Also subbed pumpkin and eggplant for sweet potato and cauliflower.

    A lovely curry. Does anyone else end up with loads of sauce? I drained some off and reduced it in a saucepan to thicken then thought why not just add some blended macadamias. It turned out terrific!

    This is very yummy and a big hit with Master Six and Miss Two. I made a few changes based on what I had in the pantry - only used half an onion (for kids), a tomato instead of capsicum, pumpkin and cauliflower (no eggplant), and diced chicken tenderloins which I added with only about 8 to 10 minutes of cooking time left (in step six). This will be on regular rotation in our house!!

    Yum!!! This was delicious. I used green beans instead of eggplant & spinach instead of peas as our family is not keen on eggplant or peas. The flavour of the curry was fantastic though & it wouldn't matter what vegies you used. Yum again!!

    I loved this recipe!  I don't like onion or chili, so i left both out and it still had lots of taste!  I used coconut milk instead of cream because that's all I had, so it was a little runny but it's fine once added to some rice.  I also left out the soy sauce and fish sauce, but added 1.5 of coconut aminos instead, and left out the peas too!  Thanks for a great recipe!  Delicious!
