Crumbed Chicken

Ingredients

6 portion(s)

  • 80 g almonds
  • 35 g wheat germ
  • 40 g sunflower seeds
  • 40 g sesame seeds
  • 2 tsp mild paprika
  • 2 tsp salt
  • 1 tsp Dried parsley
  • 1000 g chicken tenderloins
  • 3 eggs, lightly beaten

Recipe's preparation

    Dairy free, gluten free
  1. 1. Preheat oven to 220oC.

     

    2. Place almonds, wheat germ, sunflower seeds and sesame seedsin TM bowl, chop for 3 seconds, speed 6.

     

    3. Add paprika, salt and parsley, mix for 10 seconds, reverse speed 3.Set aside on dinner plate.

     

    4. Coat chicken with beaten egg and then roll in the crumb mixture.Place on lined baking tray.

     

    5. Bake for 12 minutes or until chicken is cooked through.

     

    Serve with chilli mayonnaise (page 49 of miniseries: low carb).

    These are great, a lovely taste and my kids ate it too. I didn't have wheat germ so used flaxseed and buckwheat instead. Yumm

    I would love to make this and the recipe notes that it is gluten free but you would need to substitute the wheat germ as this is not suitable for those with intolerances.

    These are very tasty & the chicken was beautifully moist.  I like a bit of zing so next time I'll add a pinch or two of Cajun seasoning.  I didn't try it with the chilli Mayo but I will make it next time as well.
