Curried Meatballs and rice

Ingredients

4 portion(s)

Meatballs

  • 1 onion
  • 3 Tbs dried breadcrumbs
  • 1 egg
  • 1 Tbs Worcestershire sauce
  • S&P to taste
  • 500g Beef mince

Gravy

  • 1 Tbs Butter
  • 1 Tbs curry powder
  • 2 Tbs tomato paste
  • 2 Tbs Mango Chutney
  • 2 Beef stock cubes
  • 2 Tbs brown sugar
  • 2 cups water

Rice

  • 300g white rice
  • 900g Boiling water

Recipe's preparation

    Meatballs
  1. Peel and quarter onion. Place in thermo bowl and dice on speed 5 for 5 seconds. Scrape down sides and repeat if necessary.

  2. Add remaining ingredients (except mince) and mix on speed 2 for 10 seconds. Scrape down sides.

  3. Add mince and mix on Counter-clockwise operation speed 3-4 for 30 seconds using spatula to assist in mixing.

  4. Remove from bowl and roll into small balls. Place in fridge for an hour to chill.

  5. Gravy
  6. Melt butter in frypan and fry meatballs until golden. When golden, sprinkle over curry powder and cook for another minute.

  7. Whilst meatballs are frying, place all remaining ingredients in the thermo bowl and mix on speed 2 for 10 seconds. (My kids don't like the chutney pieces so I increase the speed to 4/5).

    Pour over meatballs and cook gently for 30 minutes.

    Thicken with a mix of cornflour and water, if necessary and serve over a bed of rice.

  8. Rice
  9. Whilst meatballs are cooking in gravy mix, place simmer basket in the thermo bowl. Weigh rice and wash thoroughly. Using this water, rinse out the thermo bowl from the gravy mix.

    Once bowl is rinsed, add boiling water and cook for 13 minutes, Varoma speed 4. 

    Once cooked, remove from bowl and fluff up with a fork.

Tip

If you don't have mango chutney, then any other chutney is suitable.

I often fry up a double batch of these meatballs and then freeze half after frying but before cooking in the gravy. It's then just a matter or reheating the meatballs and cooking with the gravy mix for an even quicker meal.

    I confess to using pre made meatballs and doing the whole thing in my large cast iron frypan..bar the rice. all I could bother with tonight!

    Fabulous and not swimming in too much tomato (high potassium issues). Easy and the man enjoyed it

    Delicious! A bit watery so I would try 1 1/2 cups water next time instead of 2. Made in my scan pan that I put straight into the oven. Will try adding extra veggies next time. Rice was amazingly good even though it sat in the thermie for 10 mins after it was cooked! Hubby raved about this one. Add curry powder straight to meatball mixture is easier too.

    This was really tasty and loved by the whole family. I added carrot to the meatball mixture and also added extra veggies to the sauce. I reduced the amount of water in the sauce by 1/4 cup and it reduced to great consistency without needing to add cornflour. Thank you we will be using this recipe again.

    This was really yummy and had lots of sauce which was really tasty.I added a hand full of sultanas and two handfulls of frozen peas right at the end,will Definately make it again tmrc_emoticons.;)

    I threw in garlic, onion and carrot to the meatball mix, along with a couple of teaspoons of turmeric, garam masala and cumin.

    This will be a regular in our house, really lovely.

    Yum, this was delicious. Made my own mince with blade steak, and used fruit chutney as that's all I had.  Will definitely be making again, and with mango chutney.  I only used 1-2 tsps curry as we don't like things too hot.
