Easy Cheats Chicken and Vegetable Pie Filling

  • 50 grams olive oil
  • 500 grams chicken breast, cubed
  • 300 grams frozen veg
  • 150 grams thickened cream
  • 150 grams water
  • salt, to taste
  • pepper, ground, to taste
  • 1 pinch dried thyme, or to taste
  • 1 heaped tablespoons Vegetable stock paste
  • 3 tablespoons cornflour

Recipe's preparation

    Easy Cheats Chicken and Vegetable Pie
  1. 1. Place olive oil in bowl and heat 2 minutes, 100 degrees, speed 1. (If you wanted to use whole fresh vegetables rather than the cheat frozen veg, place them in the bowl here with the oil and saute them, increasing the time to 4 minutes. Zucchini, carrot, onion all go well here.)
  2. 2. Place all other ingredients into bowl and cook 20 minutes, Varoma temp, Speed 1. (If sauce ends up too runny at the end you could simply add some more cornflour to thicken and give it another minute on speed 1 to incorporate.

We use this filling to make individual pies in our Sunbeam Snack Pie Maker. This will make you the 12 serves of the snack size pies (it says snack but they are a perfect size for me and my toddler, my man child often has 2!) Otherwise filling can be used to make one large sized pie, I havent made it this way yet let me know how it goes!
I usually make 6 pies and freeze the other half of the filling for later in the month to thaw out and make another 6. Freezes perfectly.
