Feta Stuffed Chicken Bites with a Herb and Parmesan Crumb

Crumb

  • 50 g sunflower seeds
  • 50 g Pepita Seeds
  • 1 sprigs fresh basil leaves
  • 1 sprigs fresh parsley leaves
  • 50 g Parmesan cheese, cubed

Chicken

  • 50 g Parmesan cheese, cubed
  • 600 g chicken breast, cubed
  • 1 tablespoons sweet paprika
  • 1 egg
  • salt, to taste
  • ground black pepper, to taste
  • 100 g Danish feta cheese, cut into 1cm cubes

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Crumb
  1. Place sunflower seeds and pepita seeds into the mixing bowl and mill 5 sec / speed 9.
  2. Set aside.
  3. Put 50g parmesan into the mixing bowl and mill 10 sec / speed 9.
  4. Set aside with the milled seeds.
  5. Put parsley and basil into mixing bowl and chop 5 sec / speed 7. Scrape down mixing bowl.
  6. Add seeds and parmesan back into mixing bowl and combine 5 sec / speed 3.
  7. Set aside in a bowl.
  8. Chicken
  9. Without washing the bowl, add 50g parmesan into the mixing bowl and mill 10 sec / speed 9.
  10. Add chicken, paprika, egg, salt and pepper into the mixing bowl and blend for 40 sec / speed 9.
  11. Assembly
  12. Preheat oven to 200 deg.
  13. Line a baking tray with baking paper.
  14. Take a tablespoon of the chicken mixture, roll into a ball and using your finger poke a hole into the ball, stuff the feta inside and smooth chicken mixture over the feta. Repeat
  15. Roll chicken bites in crumb mixture and place on baking tray.
  16. Bake in the oven for 20 minutes, turning once halfway through.
  17. Enjoy with your favourite dipping sauce and side.
