Lemon Chicken Stirfry

Ingredients

4 portion(s)

Lemon sauce

  • 1/2 lemon zested
  • 40 g lemon juice, (approx. 1 lemon)
  • 20 g sesame oil
  • 200 g Liquid Chicken Stock
  • 30 g soy sauce
  • 1 tbsp sugar
  • 3 tsp Corn Flour

Chicken & vegetable stirfry

  • 600 g chicken breast, cut into 2cm pieces
  • 150 g carrots, cut into thin slices diagonally
  • 1/2 red capsicum, cut into 1 cm cubes
  • 250 g Bok Choy/Pak Choy, trimmed, cut in to pieces
  • 1 spring onion/shallot, sliced thinly
  • 200 g mushrooms, sliced thinly

Recipe's preparation

    Lemon sauce
  1. Place lemon zest, lemon juice, sesame oil, liquid chicken stock, soy sauce and sugar and mix 10 sec/speed 8.

  2. Chicken & vegetable stirfry
  3. Add vegetables into Varoma dish with harder vegetables towards the bottom (e.g. carrot, capsicum, spring onion, bok choy then mushrooms on top).  Put Varoma in place and heat lemon sauce for 10 minutes/Varoma/Gentle stir setting.


    Add chicken and cornflour to mixing bowl and mix 5 sec/Counter-clockwise operation/speed 3 to coat in lemon sauce.


    Break up the vegetables then place Varoma dish back into position and cook for a further 15 minutes/Varoma/Counter-clockwise operation/Gentle stir setting.  


    Serve lemon chicken stirfry with rice and noodles.

    This was great. My partner cooked this and but couldn't find the millions of lemons we have so he used a lime instead and i couldn't taste the difference. Will definatley give this a go again (but with lemons lol)

    tmrc_emoticons.) I really like this recipe. I love how the chicken cooks in the sauce while the vegies cook on top.  I used the Thermomix vegie stock (1tsp) with water or white wine, and honey instead of sugar.  It works great with frozen veg on the top with 10 minutes left to cook.

    This recipe was ok. I think there might have been something wrong with the lemon I used as the sauce turned out really bitter. I also used chicken thighs instead of breast and added cooked pad thai noodles at the end. My 4 & 2 yr old boys loved it so that makes Mum happy tmrc_emoticons.;)
