Moderate Salicylate Savoury Mince/Bolognese Sauce

  • 2 garlic cloves, peeled
  • 1 leek, white part only
  • 30 g sunflower oil
  • 1/2 can red kidney beans, rinsed
  • 1/4 Beetroot, peeled
  • 1 carrot, peeled and quartered
  • 1 choko, peeled, cored and quartered
  • 1 ripe pear, peeled and cored
  • 1/2 level tablespoon cocoa powder
  • 2 level teaspoons failsafe vegetable stock concentrate OR salt
  • 200 g water
  • 500 g Beef mince

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add leek and garlic to mixer bowl, chop 6 seconds, speed 6. Scrape down sides of bowl. Add 30g sunflower oil, and saute for 5 mins, temp 120, speed 1.

    Add other vegetables and beans. Chop 6 seconds, speed 6. Scrape down sides. Add water, cocoa powder and stock paste. Cook for 10 minutes, 100 degrees, speed 2.

    Meanwhile, cook mince in a frypan on the stove. You could try cooking the meat in the steamer basket while the sauce is cooking, but I have not tested that.

    Puree for 30 seconds, speed 9. Add to mince and stir to combine.

    Serve with mashed potato as shepherds pie, or with pasta.
