Nachos
- 1 onion, quartered
- 2 cloves garlic, peeled
- 2 carrots, roughly chopped
- 2 capsicums, roughly chopped
- 2 Small zucchinis, roughly chopped
- 10 grams olive oil
- 3 tablespoons taco seasoning or to taste
- 250 grams Beef mince
- 200 grams Tinned tomatoes
- 1/2 tablespoon veggie stock concentrate
- 1 tmx measuring cup of water
- Nacho chips

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- 1. Place all vegetables in bowl and blitz speed 8 until fine.
2. Add oil and taco seasoning
3. Cook 2mins, varoma, spoon soft
4. Roughly Break up mince and add to bowl
5. Cook 5mins, Varoma, Reverse, Speed 2
6. Add tomatoes, water and stock
7. Place simmer basket on lid to prevent splatter and cook 15mins, Varoma, Reverse, Speed 2
8. Crisp up nacho chips in the oven
9. Pour mince sauce of nachos

Tip
My family doesn't like taco mix so we left it out and it still tasted delicious.
You may like to add some shredded cheese over the top.
