Nadias' Chicken & Fennel Cannelloni

Ingredients

Chicken & Fennel Cannelloni

  • 1 fennel bulb, Trimmed and Roughly Chopped
  • 2 Garlic cloves peeled
  • 40 g olive oil
  • 3-4 Chicken thigh fillets, Thinly sliced
  • 250 g ricotta cheese
  • 150 g baby spinach, (Frozen or Fresh)
  • 3 egg yolks
  • 1-2 Packets of Cannellonni Shells
  • 800 g Passata Sauce
  • 300 g cheese, roughly chopped - 2cm cubes works best

Recipe's preparation

  1. Place the cheese in the bowl and grate for 7 seconds | Spped 7. Set Aside


    Place fennel, spinach and garlic in TM bowl. Chop 5 secs | speed 6.


    Add olive oil, Saute 3 mins | speed 2 |100 degrees.


    Add Chicken, and cook for 10 minutes | 100 Degrees | Speed 2


    Add ricotta, egg yolk and mix for 30 seconds, (or until mix is consistently smooth) on Speed 6 gradually increasing the speed (may require assistance of spatula once speed 6 is reached).


    Pour the chicken & fennel mix into piping bag.


    Pour half of the Passata sauce into the base of a baking tray lined with baking paper and spread out evenly.


    With cannaloni tube upright on bottom of lasagne dish pipe chicken and fennel mix into tube one by one and lay in tight rows.


    Pour remainder of passata sauce over the top of the cannelloni and cover with grated cheese as desired.


    Bake in oven 180 degress covered with aluminium foil for 30 mins. Remove foil and bake for a further 10 minutes.

Tip

To make it Gluten Free - Use the San Remo Brand of Gluten Free Cannelloni shells

Add salt and pepper to season when adding the ricotta and egg yolk

Can be sprinkled with fresh parsley and or basil before being baked for extra flavour

Serve with a side salad
