Paleo Meatloaf with Red Sauce

Ingredients

Paleo Meatloaf

  • 8 rindless bacon or prosciutto
  • 40 g Flaxseed
  • 2 cloves garlic, peeled
  • 1 onion, peeled & halved
  • 8 sprigs flat parsley, leaves only
  • 1 carrot, chopped
  • 1 zucchini, chopped
  • 2 stalks Celery, chopped
  • 800 g Beef mince
  • 2 eggs
  • salt & pepper, to taste
  • 500-800 g mixed vegetables, to serve

Red Sauce

  • 1 clove garlic, peeled
  • 180 g brown onion, peeled & halved
  • 4 sprigs flat parsley, leaves only
  • 1 stalk Celery, chopped
  • 40 g oil
  • 150 g white wine
  • 800g tomatoes, canned
  • 600g sweet potato, chopped
  • 170g carrot, chopped
  • 170g potato, chopped
  • salt & pepper, to taste

Recipe's preparation

    Meatloaf
  1. Add Flaxseed to bowl and Mill 10-15secs, Speed 9

    Add garlic, onion, parsley, carrot, zucchini, celery, salt & pepper to the bowl & Chop 5secs, Speed 7

    Scrape bowl and Chop 5-10secs, Speed 6

    Add mince & eggs and Mix 20secs, Speed 5

    Place ThermoMat or a long sheet of aluminium foil on a work surface and lay bacon or prosciutto lengthways onto it

    Place mince mixture on bacon or prosciutto and shape into a large rectangle

    Roll mince into a log, ensuring bacon/prosciutto is tightly wrapped around the outside of the meatloaf

    Lightly oil Varoma tray and place meatloaf into the centre

    Distribute vegetables of choice loosely around the meatloaf

     

    Set aside till sauce is prepared

  2. Red Sauce
  3. Place garlic clove, brown onion, parsley and celery in the bowl and Chop 3secs, Speed 7

    Add olive oil and saute’ 3mins, 120C, Speed 1 

    Add white wine, canned tomatoes, sweet potato, carrot and salt & pepper and Cook 5min, Varoma, Speed 1

  4. Bring it Together
  5. Place Varoma with meatloaf and vegetables into position, Cook 35-40mins, Varoma, Speed

    Test to ensure meat is cooked through by slicing open and checking the colour

     

    Once cooked, place meatloaf onto a large platter with vegetables and pour sauce over the top to serve
