Paleo sweet potato, spinach & bacon turkey patties/burgers

  • 6 pieces shortcut bacon
  • 630 grams sweet potato, cut into pieces
  • 80 grams onion, (half a large onion)
  • 65 grams Baby Spinach Leaves
  • 3 cloves garlic
  • 1/2 teaspoon salt
  • 2 teaspoons fresh rosemary
  • 30 grams Coconut Flour, (3 tablespoons)
  • 1000 grams turkey mince
  • 2 eggs
  • 2 teaspoons Dijon mustard
  • 1 teaspoon paprika sweet

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Cook the bacon on a frypan until crispy. When done, put on paper towel on a plate to drain the fat.

    2. Meanwhile, add the sweet potato, spinach, garlic and onion to the Thermomix bowl. Chop for 15 sec/speed 5.

    3. Crumble the cooled bacon into the bowl. Add the rest of the ingredients and mix for 5 sec/speed 5.

    4. Transfer the mix to a large bowl (for safety to avoid putting your hands near the blades) and shape portions of mixture into balls, whatever size you prefer for your patties/burgers.

    5. Heat a frypan over medium-high heat and add a tablespoon of coconut oil. Fry patties in batches, using a spatula to flatten them and adding coconut oil to the pan between each batch as needed. The small patties I made took 4-5 mins each side to cook through. There should be no pink left in the middle.

Tip

This makes a big batch of small patties, which I freeze ready for a quick toddler meal.

Also great as meatballs for an appetizer or finger food.
