Pork Shanghai Dumpling

Filling

  • 500 g pork mince
  • 25 g Baby Spinach Leaves
  • 10 g Ginger, peeled
  • 1/4 teaspoon salt
  • 1 teaspoon sesame oil
  • 1 teaspoon white vinegar
  • 1 tablespoon oyster sauce

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    FILLING
  1. 1 - Place Ginger and Baby Spinach in TM Bowl chop 3 seconds speed 7;

    2 - Add all remaining ingredients, mix Counter-clockwise operation speed 3 until well combined (approx 20 seconds)

    3 - Place filling mixture into a ceramic bowl and clean and dry TM Jug

     

  2. ASSEMBLY
  3. 1 - Working with one wrapper at a time, place wrapper on flat work surface and place one teaspoon of filling in the centre;

    2 - Brush a little water around the edge of the wrapper and seal into whatever shape you like by gathering the edges together.  (I use a plastic Gow Gee Press for assembly)

    3 - Continue steps 1 - 2 above with remaining wrappers;

     

  4. STEAMING
  5. 1 -Spray a little oil on Varoma Dish and Tray to help prevent sticking.  Place dumplings into Varoma Dish and Tray, keeping side vents clear on Varoma Tray.  Place Varoma Lid in place. NB - you will fit more dumplings into the Varoma if you stand the dumplings up rather than lay them down in the dish and tray. Just ensure dumplings arent touching one another as they will stick to each other.

    2 - Fill TM Jug with 900g Water.  Place lid on Jug and position Varoma on top of TM lid.

    3 - Set time 25 mins, Varoma temperature, speed 2.

    4 - Dumplings are ready once wonton wrappers appear a little transparent

    5 - Serve with your favourite Soy Sauce

    Can you make the dumplings ahead of time, eg: in the morning and then cook that night or do they need to be prepped and cooked immediately?

    Lovely, thank you! Flavours aren't too overpowering and even my very fussy 6 year old ate it. We made them as a family and call them 'little food presents'. Anything to get them to eat it! Lol.

    These were yum. As a complete novice to making dumplings the one thing I would add for others, is to not let the dumplings touch each other when in the varoma. They stick together and you end up with a mess!
