Silken Egg Omelette
- 30 g carrot, 5cm chunks
- 10 g herbs (e.g. chives, coriander, spring onion)
- 300 g pork leg or loin
- 4 eggs, or 6 egg whites + 2 egg yolks
Pork Marinade
- 1 tsp chinese cooking wine
- 1 tsp light soy
- 1 tsp sesame oil
- 1 tsp pepper
- 1 tsp olive oil, for stir-frying
Silken Egg Mixture Marinade
- 1 tsp chinese cooking wine
- 150 g chicken stock (liquid)
Accompaniments
- 300 g Jasmine rice, unwashed
- 300 g green veges of choice, (e.g. brocolli, or chinese greens)

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
1. Prepare varoma tray for steaming egg mixture by lining it with water-soaked baking paper
2. Place carrots in TM bowl and grate 5sec/speed5
3. Add herbs and finely chop 3sec/speed8
4. Remove carrots and herbs into a separate bowl
5. Add eggs plus the egg marinade (1tsp wine, 150g chicken stock liquid) into TM bowl and whisk 5sec/speed3
6. Poor egg mixture into prepared varoma tray
7. (Without rinsing the TM bowl) Add pork, mince 12se/speed6
8. Add first 4 pork marinade ingredients, then combine 5sec/speed6
9. Add olive oil and stir-fry 4min/varoma/speed soft/reverse
10. Spread semi-cooked pork mince into the egg mixture in the varoma tray
11. With the Thermomix simmering basket in place, weigh-in 300g jasmine rice
12. Remove rice and simmering basket to rinse rice under tap
13. Place 1L water into TM bowl, put rice basket into position and steam for 18min/varoma/speed4.
14. Add veges at the appropriate remaining cooking time.

Tip
The silken egg should have a tofu-like consistency when cooked through. Prolong the cooking time if necessary but do not overcook the rice. Place rice in Thermoserver to keep warm.
To serve, gently cut the steamed silken egg into a few pieces to pile on a plate, garnished with extra herbs.
