Stuffed capsicums (peppers)

  • 4 Capsicums (peppers)
  • 40 grams Parmesan cheese, cut into pieces (3cm)
  • 100 grams Cheddar cheese, cut into pieces
  • 1 brown onion, cut into quarters
  • 2 garlic cloves
  • 3 slices bacon
  • 30 grams olive oil
  • 500 grams Beef mince
  • 250 grams cooked rice
  • 1 tablespoon vegetable stock
  • 1 teaspoon mixed dried herbs
  • 1 can tomato soup

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Preheat oven to 180°C
  2. Grate parmesan cheese for 10 seconds on speed 10 and set aside
  3. Grate cheddar cheese for 10 seconds speed 7 and set aside
  4. Place onion, garlic and bacon into bowl and chop for 5 seconds on speed 6 and scrap down the sides of the bowl
  5. Add oil and cook for 3 minutes at 120°C on speed 1
  6. Add in the mince and cook for 5 minutes at 100°C on speed 1.5Counter-clockwise operation
  7. while mince is cooking cut the capsicums in half, clean out the insides and remove the stalks and place them into a greased baking dish with hollow side up
  8. when mince is finished cooking add in 200g of the tomato soup, reserved parmesan cheese, vegetable stock and mixed herbs and mix for 15 seconds on speed 4Counter-clockwise operation
  9. Spoon mixture onto the halved capsicum
  10. spoon over a tablespoon of the leftover tomato soup onto each half and top with the grated cheddar cheese
  11. Bake for 15 minutes at 180°C until the cheese is all melted and golden brown

any left over mince mixture can be baked in a dish for 15 minutes
