Thai Beef or Chicken Massaman Curry

Ingredients

Curry

  • 150 g peanuts
  • 1 --- brown onion, halved
  • 30 g peanut oil
  • 60 g massaman curry paste
  • 400 g coconut milk
  • 400 g coconut cream
  • 500 g Beef or Chicken, cut into 2cm cubes
  • 1 tablespoon Stock Concentrate
  • 1 tablespoon cornflour
  • 2 tablespoons brown sugar
  • 1 tablespoon fish sauce
  • 2-3 potatoes, cut into cubes
  • 1 cinnamon sticks
  • 2 bay leaves
  • 5 cardamon pods, lightly crushed
  • 1 tablespoon Tamarind Concentrated

Recipe's preparation

    Curry
  1. Place peanuts and onion into TM bowl and chop 3seconds, speed 7. Scrape down side of bowl

  2. Add oil and massaman curry paste and saute 3 minutes, Varoma, speed 1.

  3. Add beef (or chicken) and 5 tbsp of coconut milk and cook 10 minutes, 100 deg, Counter-clockwise operation, speed 1 with MC removed and TM basket on top of mixin bowl lid.

  4. Remove basket and add cornflour, stock, coconut milk, coconut cream, sugar, fish sauce and tamarind.

  5. Place TM basket in mixing bowl and add the potatoes, cinnamon, bay leaves and cardamon pods, and cook 20 minutes, 10 deg, Counter-clockwise operation, speed 1 with MC removed.

Tip

Serve with Jasmine Rice, I also like to pre cook my potatoes in the steamer just to soften them a little more.

    This was delicious, both my hubby and I really enjoyed it. Tasted like what I had at other places just without it being spicy, which we didn't mind. However next time I will double the meat as 500g was enough for 2 (and would like some for lunch the next day

    This is quite yummy although not very spicy, which suits me just fine as I don't like really spicy food.  The potatoes took a really long time to cook.  I cut them into what I thought was small enough pieces but they still took quite a long time to cook.  I put the MC back on when the potatoes didn't cook after 20 minutes and I think that helped cook them.  Overall pretty good meal but if you are looking for spice you will need to add your own.

    I gave this 2 stars but it could get a few more. I think the ingredients are spot on but the method I am a little unsure of. Firstly fix the typo of 10 deg in step 5. Also 20 minutes for me seemed woefully inadequate for the potato to soften. I put the whole lot in the Le Creuset and slow cooked it for a few hours. Was lovely after that.

    Love the taste, my two year old and hubby enjoy this with rice. First time we did this recipe we adjusted the recipe by leaving out most of the coconut milk as we thought there was too much. Second time round we added the full amount. Quite liquid but still tasted good so no complaints!! Yum!! I always go back for seconds!
