Tuna/Lobster Mornay - Bechamel Sauce

  • 1 litre Milk
  • 100 g flour
  • 60 g Butter
  • 140 g cheese
  • 1/2 teaspoon salt, or to taste

Tuna/Lobster Mornay

  • 1 juice of 1 lemon, Fresh is always best
  • pinch Cayenne pepper or to taste
  • pepper to taste
  • pinch nutmeg - optional
  • 420 g tin tuna, drained
  • 420 g tin creamed corn
  • 100 g fresh or frozen peas
  • Breadcrumbs for topping, Fresh is always best
  • Paprika for topping, Adds nice colour

Recipe's preparation

    Tuna/Lobster Mornay
  1. Pre-heat oven to 180C fan forced.

    Make Bechamel Sauce as per recipe in Everyday Cookbook.  I double the ingredients as listed above.

    Add juice of lemon, flaked tuna, creamed corn, frozen peas, pinch cayenne pepper and pepper.  Mix through on Reverse for 5-10 seconds on speed 2-3.  Just enough to incorporate everything.

    Pour over cooked pasta shells or spirals in large rectangle casserole dish.

    Topping:

    Breadcrumbs - from Everyday Cookbook, little dobs of butter and sprinkle with paprika for nice colour.

    Bake in oven for 30 mins or until golden.
