Asparagus and Zucchini 'Risotto'

  • 500 g aspargus, (cut off ends)
  • 2 cups broccoli florets, ( or 1 broccoli stem, peeled and roughly chopped)
  • 2 medium size zucchini, (roughly chopped)
  • 1 red onion, ( or 6 shallots)
  • 1/4 teaspoon Nutmeg
  • 20 g coconut oil
  • 1/4 cup vegetable stock, (1/4 teaspoon of stock paste mixed in 1/4 of water)
  • 1 Lemon zest and juice
  • 1/3 cup sunflower seeds
  • 1 bunch parsley, (rouchly chop half of bunch)
  • salt & pepper

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Place onion and half the bunch of parsley into the bowl. Chop on spd 7 for 3 secs.

    2. Add oil and saute for 2mins, 100C on spd 1.

    3. Add asparagus, broccoli and zucchini. Chop on spd 6 for 3 secs. Repeat until a rice consistency is reached.

    4. Add nutmeg and stock, cook on Reverse, 100C, 5 mins and spd 1. (If needed cook another few minutes so the risotto is softened.)

    5. Pour mix into basket to strain any excess liquid and place risotto into you serving bowl.

    6. Add the zest, juice, seeds and left over parsley to the risotto. Toss through and serve.

  • I found the speeds and

    I found the speeds and timings to be a little off, but easily tweaked. This recipe tastes like Spring - beautiful balanced green vegetable flavours. Not for people who aren't in love with vegetables, but an excellent option for people who are trying to like them more (ie, my MOTH) tmrc_emoticons.)
