Ingredients

Patties

  • 50 grams Tasty cheese
  • 1 onion, large
  • 1 clove garlic fresh
  • 1 can Sanitarium Nutmeat
  • 85 grams Greek plain yoghurt
  • 3 eggs
  • 180 grams Whole rolled oats

Sauce

  • 1/2 small red capsicum, finely chopped
  • 1-2 sliced mushrooms
  • 420g can Heinz spicy tomato soup
  • 350 grams hot water

Recipe's preparation

    Patties
  1. Pre-heat oven to 180 degrees C.

  2. Place cheese in TM and grate for 6 seconds on speed 8. Set aside.

  3. Place onion & garlic in TM and chop for 3 seconds on speed 7.

  4. Add Nutmeat, yoghurt & eggs and mix for 20 seconds on speed 4.

  5. Add the rolled oats and cheese and combine for 30 seconds on Reverse on speed 5.

  6. Form into patties by hand and lightly fry in oiled pan.

  7. Place patties in medium size baking dish (with lid), sprinkle capsicum & mushrooms over patties.

  8. Mix tomato soup and hot water together and pour over patties.

  9. Place in oven and bake for 30 minutes.

    Teniele, I have only just logged back on to the Recipe Community and so glad that you enjoyed my recipe. I loved your creativity and how you made the mixture for your Vegetarian stuffed peppers.

    I made this the other night. Was really easy and despite initially thinking patty mix was too sloppy they cooked and flattened easily to patties, I dropped handfuls into my pan and flattened with egg flip. 

    If I make again I would put an extra tin of tomato soup in or perhaps heat it to drizzle over afterwards as the patties soaked most of it up. 

    We had it with rice and steamed veg and had lots of leftovers (half the patties some rice and veg) so I chopped it all up and mixed it together and froze. It's the perfect stuffing for stuffed peppers! 

     

    When I thaw it I plan on slicing the tops off some whole capsicums and filling with the leftovers, popping the "lid" back on the capsicums and cooking upright in a simmering pot of water. My grandmother used to make stuffed peppers with mince onion and rice boiled in water when I was a child and I have been wanting to recreate a vegetarian version and this is really perfect! Heat a tin of tomato soup with a dollop of sour cream to drizzle over after! Thank you! UPDATE: I have thawed my mix and made the stuffed peppers it is the perfect filling for them and they were delicious! I love meals you can use the leftovers a different way!

    Love love loved it! I will be making this again. I was in a bit of a hurry so i skipped the sauce, but the patties were still great without it. Plus the ingredients are things i always have on hand. Nutmeat makes great patties! Thanks for the recipe!
