Cauliflower and Chickpea Korma

  • 30 grams olive oil
  • 1 onion, large
  • 1 carrot, cut into 1 cm chunks
  • 200 grams korma curry paste, bought or homemade
  • 3/4 teaspoon garam masala
  • 450-500 grams cauliflower floret
  • 325 grams Cashew cream, as per below recipe
  • 400 grams Canned Chickpeas, rinsed and drained
  • 238 grams water
  • 60 grams tomato paste
  • 2 pinches chilli flake, dried, (optional)
  • 150 grams spinach, baby or chopped
  • 20 grams lemon juice
  • 1 teaspoon Vegetable stock paste, Homemade

Cashew Cream

  • 140 grams Cashews, raw, unsalted
  • 5 grams lemon juice
  • 354 grams water, cold

Korma Paste

  • 20 grams coriander seeds
  • 80 grams cumin seeds
  • 20 grams garam masala
  • 60 grams dessicated coconut
  • 100 grams blanched almonds
  • 20 grams fine sea salt
  • 80 grams fresh ginger
  • 160 grams vegetable oil
  • 150 grams tomato puree
  • 80 grams fresh chillies
  • 5 cloves garlic
  • 2 bunches fresh coriander

To Serve

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Cashew Cream
  1. Place bowl on top of the mixing bowl and measure cashews into it. Add enough cold filtered water to completely cover.
  2. Leave to soak in the fridge for 6-8 hours or overnight
  3. Drain cashews and rinse well. Place in the Thermomix with lemon juice, pinch of salt and 1 cup of cold water.
  4. Blend till smooth and creamy, 30 seconds, speed 10. Set aside.
  5. Korma Paste
  6. Clean and dry mixing bowl. Place coriander seeds and cumin seeds in mixing bowl then toast 5 min/120c/speed 1.
  7. Grind 30 sec/speed 8 then scrape down sides of mixing bowl with spatula. Grind again 30 sec/speed 8 until finely ground.
  8. Add garam masala, coconut, almonds and salt then mix 20 sec/speed 9
  9. Add ginger, oil, tomato paste, chillies, garlic and fresh coriander then mix 30 sec/speed 8. Scrape down sides of mixing bowl with spatula then mix again 20 sec/speed 8. Transfer to a bowl and set aside.
  10. Cauliflower and Chickpea Korma
  11. Place onions and oil in mixing bowl then chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula then cook 5 min/120 c/speed 1.
  12. Add 200g korma paste and garam masala then cook 3 min/120c/speed 1
  13. Add cauliflower, carrots, chickpeas, cashew cream, vegetable stock paste, water, tomato paste and chilli flakes (if using). Cook 12 min/100°C/Counter-clockwise operation/speed 1
  14. Check vegetables are cooked and if not, cook a further up to 6 minutes.
  15. Add spinach and lemon juice and season with salt and pepper. Cook 1 min/100c/speed 1.
  16. To serve, drizzle the curry with additional cashew cream and garnish with coriander.

Tip

The recipe for korma paste makes 700-800 g. The remaining paste can be frozen.
