Freekeh with Cauliflower, Pomegranate and Mint

Ingredients

6 portion(s)

  • 500 grams Freekeh
  • 1 brown onion
  • 20 grams oilve oil
  • 1 heaped tsp Stock Concentrate
  • 230 grams water
  • 1/2 cauliflower
  • 1/4 cup plain flour (sifted)
  • 1 heaped tsp mixed spices
  • 400 grams can brown lentils
  • 1cup walnuts chopped
  • 1/3 cup mint leaves chopped
  • 1/3 cup corriander leaves chopped
  • 1/3 cup basil leaves chopped
  • 2 heaped tablespoons extra EVOO, for serving
  • 3 heaped tablespoons pomegranate molasses
  • 7 heaped tablespoons Oil for frying
  • 1 pomegranate

Recipe's preparation

  1. Soak freekeh in water for 20 minutes, then drain.

    2.Place onion into mixing bowl and chop 3 sec/speed 4.

    3. Add oil and saute 3 min/100°C/speed 1.

    4. Add freekeh, water and stock and cook 20 min/100°C/Counter-clockwise operation/speed 1.

    5. Meanwhile, mix flour and spices, then add cauliflower florets and coat. 

    6. Heat oil in fry pan and fry cauliflower over medium heat for 10 minutes untill cauliflower is soft and gold ( place on paper towel).

    7. In large bowl, place lentils, pomegranate, walnuts, freekeh and herbs.

    8. Drizzle with Extra Virgin olive oil and pomegranate molasses.

    9. Mix all ingredients and serve.

    I thought you have to cook freekeh for a long time, like 50mins and in a lot of water or stock 1liter?. Just checking that 20mins and so little water is enough?

  • Freekah is young green

    Freekah is young green cracked wheat.  You cook it in much the same way as other grains, and the result is similar to burghul.  It is chewy, nutty and yummy!  You can buy it in health food shops, or in the health food section of the bigger supermarkets. Enjoy! tmrc_emoticons.)
