HALOUMI AND POMEGRANATE SALAD
- 1 tablespoon lemon juice
- 2 tablespoon light olive oil
- 75 grams pomegranate pulp
- 1/4 cup of mint leaves
- 2 shallots, sliced thinly
- 150 grams baby rocket
- 1 small fennel bulb, sliced thinly
- 400 grams Haloumi, sliced

Recipe's preparation
- Cook the haloumi in a frying pan with a little oil, until brown. Cool slightly. Place everything into a bowl and mix to combine. Enjoy!
