Indian-style Shakshuka

  • 1 tablespoons olive oil
  • 3 tsp curry powder
  • 1/2 tsp dried chilli flakes
  • 1 brown onion, Quartered
  • 1 red capsicum, Quartered
  • 400 g canned diced tomatoes
  • 400 g Canned Chickpeas, Rinsed & drained
  • 100 g fresh baby spinach leaves
  • 4 eggs
  • 120 g paneer, Cut into 2cm pieces
  • 1/4 --- fresh coriander, Cup
  • 1 lemon, In wedges

Recipe's preparation

  1. 1. Chop onion & capsicum 3sec/speed 5.
    2. Add oil, curry & chilli; cook 3 mins/100deg/speed 2.
    3. Add tomatoes, chickpeas & spinach; cook 3mins/100deg/reverse speed 2.
    4. Pour sauce into large saucepan, heat gently.
    5. Using a large spoon, make 4 shallow indents in tomato mixture. Crack 1 egg into each indent and sprinkle with paneer. Reduce heat to medium and cook, covered, for 6-8mins or until eggs are cooked to your liking.
    6. Sprinkle with coriander and serve with lemon wedges.
