Nivik -Chick Peas with Spinach

Ingredients

4 portion(s)

  • 2 tins of chick peas, risnsed and drained
  • 2 onions, Medium size, peeled and quartered
  • 1 clove garlic, peeled
  • 50 grams olive oil
  • 100 grams tomato paste
  • 1 teaspoon salt
  • fresh ground black pepper
  • 1 teaspoon sugar
  • 250 grams Frozen spinach

Recipe's preparation

  1. 1. Place onions and garlic in TM bowl. Process 5 sec on speed 5. Scrape down and add olive oil. Sweat off for 2.5 minutes, 100 degrees speed 1.

    2. Add tomato paste, salt, a generous grinding of black peper, sugar, chick peas and defrosted  frozen spinach. Cook for 20 min/100 degrees/reverse speed 1.

    3. Check for seasoning and adjust if necessary. Should be moist but not too liquid. If fine transfer to Thermoserver until needed or if too liquid cook another 5 min/100 degrees/reverse speed 1.

    Serve with bread (or toast), and salad for a light meal.

    Originally this recipe would have been made with fresh spinach, I just didn't have any and needed to put a quick meal together. You could use 1 or 2 bunches of english spinach, I've even seen a variation on this using silver beet, but the stalks need to be cut quite small. This is a variation on an Armenian dish. Byron

    I'm not a fan of frozen spinach, could fresh be substituted instead? How much do you think?
