Potato & Carrot Pie

Pie

  • 2 carrots
  • 3 potatoes, Peeled
  • 3 shallots
  • 2 eggs
  • 1 tablespoon oil
  • 1 can corn kernels, small can
  • 1/2 red capsicum
  • 20 g breadcrumbs
  • 80 g cheese

Recipe's preparation

  1. 1. Pre-heat oven to 180C


    2. Lightly grease a round ovenproof pie dish


    3. Chop cheese on speed 8 for 6 sec and set aside


    4. Chop carrot & potato on speed 8 for 5 sec


    5. Scrap down side of the bowl then add shallots and red capsicum and chop on speed 8 for another 4 sec


    6. Add oil and saute for 3mins on speed 1 at 100C


    7. Add breadcrumbs, eggs, corn kernels and reserved cheese and mix on speed 4 for 20sec


    8. Pour mixture into prepared dish and bake in oven for 40-45mins until golden


    (some grated cheese and breadcrumbs can be sprinkled on top)
