Spanish Pisto by Thermomix (slightly modified)

Spanish Pisto by Thermomix

  • 150 grams red capsicum, small pieces
  • 150 grams green capsicums, small pieces
  • 300 grams onions, in quarters
  • 300 grams Zucchinis, skin on in medium pieces
  • 50 grams olive oil, Tx unmodified recipe puts 100g
  • 1 tsp salt, I use Himalayan
  • 1 pinches dried chilli flakes, ground black pepper
  • 1 tsp Vegemite®, Tx unmodified recipe puts 1 veggie cube. If i have homemade veggie cube I use this instead of vegemite
  • 500 grams tomato passata, Homemade or Bottled

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add green and red capsicums and onions to Thermomix bowl chop: 4 secs/speed 4. Put in a bowl and reserve.
  2. Add zucchini to Thermomix bowl and chop: 2 secs, speed 4.
  3. Scrape down edges and add olive oil and the reserved vegetables.
  4. Programe:15mins,Varoma, reverse blade, speed spoon.
  5. Add tomato passata , salt and ground black pepper and veggie cube or vegemite. Programe 20 mins, Varoma, reverse blade, spoon speed.
