Spiral zucchini with sweet potato and pumpkin sauce

Spiralled zuchini

  • 4 Zuchini, Spiralled using a spiralizer
  • 4 Baked sweet potato, I used leftovers
  • 6 pieces butternut pumkin
  • 1 brown onion
  • 2 carrots
  • 2 sprigs Continental Parsley
  • 0.5 bottle Pasta Sauce, tomato

Recipe's preparation

  1. Use a spiralizer and spiralize the 4 zucchini. Place into steam basket of Thermomix

  2. Add all other ingredients and mix 15 secs on speed 5

  3. Cook 20 mins varoma speed 2

  4. Take out measuring cup, sit steaming basket on top of lid with zucchini. Steam for 20 mins whilst sauce cooking.

  5. Add zucchini to plate, a dollop of butter, sprinkle with fresh parmesan and grated cheddar cheese, add cracked pepper. 

  6. Spoon cooked sauce over zucchini. Garnish with parsley.

    This was lovely thank you. Even the husband who hates zuchini liked it. I substituted tomato sauce for a can of tomatoes and tomato paste. Microwaved the sweet potatoes. Used a whole butternut pumpkin.  A lovely way to get a heap of veggies in us. I did cook for 20 minutes then a further 20 minutes but maybe I should have put the steam basket on top in the first instance.  tmrc_emoticons.)
