Sweet Potato, Chickpea & Eggplant Hotpot

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 1 long red chilli seeded, chopped, or flakes or powder
  • 1 tsp smoked paprika
  • 2 Medium Sweet potatoes, cubed
  • 1 medium eggplant, trimmed, chopped
  • 1.5 cups tomato pasta sauce, or patata
  • 400 g can Chickpeas, rinsed, drained
  • 1 tbsp parsley, chopped
  • 1 Crusty Bread, to serve

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Heat Oil, 2m 100 degrees Celsius Sp 1.
    Add onion, 5m Sp 1, until soft.
    Add garlic, chilli, paprika - 30 sec Sp 1, until fragrant.
    Add sweet potato, eggplant, tomato pasta sauce
    Add 2 cups of water
    Simmer 15m 100 degrees SP1, until potato is tender
    Add chickpeas 5m 100 degrees SP 1.

    All done!!! serve with bread


1. You can prepare the cutting of ingredients in the thermomix prior to cooking.
2. Depending on your love of chilli, increase or decrease as you like.
3. Can use chilli powder or dried chilli flakes
