Tip

Please refer to The Basic Cookbook for the Vegetable stock paste recipe.

Different shaped pasta may vary slightly in cooking time. Adjust cooking time to ensure pasta is cooked al dente. Pasta that is cooked al dente is tender, but still firm to the bite.

I love this recipe for a quick and easy dinner that the family loves. I use up whatever veggies I have in the fridge and it always comes out great! The vegetable stock paste is a must and I use 2 TBS so it has a lovely depth of flavour to the meal. I substitute with GF pasta to make i a GF dish. Add it to your weekly go-to-meal and enjoy tmrc_emoticons.)

  • Had this at a cooking demo
    Submitted by Tinkermouse on 1. September 2016 - 19:38.

Had this at a cooking demo last night so thought I would give it a whirl. What an absolutely delicious vegetarian dish.  All the family thoroughly enjoyed it.  Only change I made was instead of feta I used Meredith's Goat Cheese.  And one more tip I used gluten free pasta which I need to for my hubby and I forgot that it cooks much quicker than regular pasta.  So I will know a shorter cooking time for the gf pasta next time. Agree with all the comments that it makes a rather large quantity.

I love this pasta. I had to double check when I calculated - less than 200 calories per serve (I left out the capsicum), although small serving sizes. Even so, a regular sized serve would be no more than 300 calories, pretty good for a pasta dish!

Delicious! I didn't have tinned tomatoes so used fresh and chopped them in with the onion and carrot. Also chopped the zuccini and mushrooms so that the kids wouldn't find them (and they didn't!!)

A lovely, hearty meal. The feta is so yummy in this dish. I would liken this recipe more to a chunky soup due to the amount of liquid. So, think of it as a soup or add a lot more pasta to make it a pasta dish. tmrc_emoticons.;)

  • Easy peasy!!   Made this
    Submitted by jomaica on 12. July 2015 - 21:59.

    Easy peasy!!

Made this tonight - spur of the moment after I couldn't decide what I wanted to eat.

I added a long red chilli for a bit of spice and I always add a bit of balsamic to any tomato based pasta sauce. I omitted the varoma steaming step and added the capsicum and zucchini in as a second stage of vege smash up at the beginning. finished up with enough for a meal and several weekday lunches.

I cooked this in my TM 31 and reduced the liquid quantities and pasta slightly so didn't go over max line. It was delicious! Served hungry husband, 31w pregnant wife & hoover 2 year old, with enough for 2 lunches!

Such a quick, delicious meal that makes such a large amount. We used fresh tomatoes and chopped them in the tm. We also left out the Feta because we didn't have any in the fridge. Will definitely be making again.

I have a TM31 are the quantities here too much for it? I don't have the taste of vegetarian cookbook to see the recipe differences. Thanks!
