  • 1 clove garlic
  • 1 onion
  • 1 small sweet potato
  • 1 red capsicum
  • 1 Medium Carrot
  • 200 g Zucchini chopped into 1cm cubes
  • 50 g olive oil
  • 50 g water
  • 1/2 Vegetable stock cube
  • 1 can lentils, drained and washed
  • 1 can diced tomatoes, no added salt
  • 2 tablespoon tomato paste
  • pinch of salt to taste
  • 2 cups of asstd rough chopped vegetables
  • 5 large potatoes, for mash topping
  • handful of grated mozzarella

Recipe's preparation

  1. 1. place onions, garlic, sweet potato, 1 med carrot and capsicum into TM bowl and chop 5 sec/speed 62. scrape down sides and add oil.  Saute for 3 mins/100'c/speed 1.3. add tomato paste, salt, stock, water, diced tomatoes, lentils, zucchini and mix for 5 secs/speed 4.4. place blended ingredients from TM bowl into slow cooker and add 2 cups of chunky cut assorted vegetables and stir through.5. make mash TM style using 4 large potatoes.  6. Place mashed potato on top of all of the slow cooker ingredients and finish with parmesan cheese.7. Cook in the slow cooker on high for 3.5 hrs or until chunky vegetables are cooked through.
