Ingredients
Lemon Syrup Cake - TM7
- 125 g Butter, softened
- 185 g caster sugar
- 2 eggs
- 2 Lemon peel, Zest of 2 lemons
- 185 g self-raising flour
- 4 tbsp Milk
- 6 tbsp freshly squeezed lemon juice, for syrup
- 6 tbsp icing sugar, for syrup

- Preheat oven to 160°C (fan forced). Grease and line a loaf tin with baking paper.
- Add sugar to mixing bowl: mix for 10 sec | Speed 9 - let settle before opening lid and scrape down the sides.
Insert the butterfly whisk and beat the butter and sugar for 2 mins | Speed 3, scrape down the sides of the Thermomix bowl and mix again for 1 min | Speed 3. - add 1 egg and mix 5 sec | Speed 9
add 2nd egg and mix 5 sec | Speed 9
Then add lemon zest. Mix additional 30 sec | Speed 4 - Add flour and milk: 15 sec | Speed 5 Scrape down and repeat if needed until just combined (don’t overmix!).
- Pour batter into prepared tin, smooth top with spatula.Bake 30–40 min or until a skewer comes out clean.
- Prepare syrupRinse mixing bowl, then add lemon juice and icing sugar:20 sec | Speed 3–4 (until smooth)
- As soon as cake comes out, prick top all over with skewer. Pour syrup evenly over the hot cake.
- Let cool completely in tin to soak up all that lemony goodness. Slice & impress!
