Ingredients

  • Rind of 1 Lemon
  • 200 g raspberries
  • 300 g apple
  • 120 g Coconut sugar
  • juice of 1 lemon

Recipe's preparation

  1. 1/ Chop Lemon Rind 10sec/sp92/ Place all other ingredients into thermomix bowl and cook 60min / 100c / Sp 1 3/ Place into a sterilised jar

    Hi two-shoes the lemon does need to help it set, perhaps just add more sugar or add some maple syrup as per one of the other users.  tmrc_emoticons.)

    Yum, made a double batch and added 100ml or so of maple syrup as it wouldn't be sweet enough for my family. LOVE it! Feeling quite Martha like today - first Apricot jame and now this tmrc_emoticons.-)

  • I doubled the recipe which

    I doubled the recipe which worked fine, but i ended up adding more sugar as it was (and still is) quite tart - more like a marmalade than a jam.  I don't have a particularly sweet tooth (I rarely eat jam as it is too sweet for me) so I think it is ok, but not sure how the rest of my family will like it. If I made again I think I would try less lemon rind - although I'm not sure if it is needed for setting?
