Aubergine Dip

Dip

  • 750 g Aubergine (eggplant)
  • 100 g olive oil
  • 1 tbsp red wine vinegar
  • 2 cloves garlic
  • sm bunch mint leaves
  • pinch Salt & pepper to taste

Recipe's preparation

      • Bake aubergines, whole & with skin on, until soft & crinkled. Aprox 45min - 1 hr on 180°. Peel, chop roughly and place in colander with a plate on top, to drain. 
    • Chop a small handful of mint leaves 5-10 sec speed 7. Set aside. No need to clean out bowl.
    • Place garlic in TM bowl, chop speed 7 for 3-5 sec. Scrape down sides.
    • Add aubergine, blend 5 sec speed 4. Scrape down sides.
    • Continue blade turning on speed 4, drizzle oil over MC to combine slowly (similar to making mayonnaise) until it thickens, aprox 2 min.
  1. Add red wine vinegar, mint, salt & pepper. Mix speed 3, 5 sec. Chill before serving.
