- 50 g parmesan, (substitute for Pine Nuts for dairy free)
- 5 g pink salt, (milled)
- pepper, (to taste)

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Place Parmesan in TM bowl.
Chop 7 seconds / speed 7 (set aside)
Place onion & garlic in TM bowl.
Chop 3 seconds / speed 7
Scape down sides of TM bowl.
Add oil.
Cook 15 minutes / 120 degrees / speed 2
Remove spinach leaves from stalks.
Add spinach, salt, pepper & juice of lemon.
Chop 10 seconds / speed 6.
Use spatula through lid to push spinach down toward blades as required.
(repeat if necessary)
Add reserved parmesan (or pinenuts).
Mix 10 seconds / speed 3.
