      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Start by combining the shallots and garlic cloves in the bowl Closed lid. Speed of 5 for 10 seconds. Scrape down the sides and repeat if needed.

    Once the garlic and Shallots are small enough add the butter to bowl Closed lid. Cook for 3mins at veroma temp Gentle stir setting mix speed.

    Then add the red wine Closed lid and cook for another 2 mins at veroma temp Gentle stir setting mix speed.

    Add beef stock and black pepper corns Closed lid, invert measuring cup to allow for steam to be released, cook for 25mins at 110 degrees. Speed 0.5

    Check - scrape down sides. if not reduced enough then repeat for another 25mins at 110 degrees, speed 0.5

    Once sauce level is just below top the blade unit then add cream and mix Gentle stir settingCounter-clockwise operation at mix speed.
