Ingredients

  • 1 cup carrot tops
  • 2 cloves garlic, medium sized
  • 1 cup basil leaves
  • 1/2 cup olive oil
  • 1/3 cup macadamia nuts
  • 1/2 teaspoon salt
  • 90 grams Parmesan cheese
  • 3-4 tablespoons lemon juice
  • 1 teaspoon Maple syrup

Recipe's preparation

  1. Place garlic and carrot tops in the bowl and chop for 3 seconds, speed 8.

     

  2. Combine all other ingredients and pulse until desired consistency is reached.

Tip

I opt for macadamias as they are less than half the price of pine nuts and the least likely of all nuts to be rancid due to their low content of unstable polyunsaturated oils.

Store in an airtight container in the fridge for 5-7 days, or freezer for up to 3 months.
