For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- 1. Heat milk for 10 minutes 80c Sp2
2. Add white vinegar and heat 2 minutes 90c Sp 1 and then let it sit for a minute or so, until it seperates.
3. Line simmering basket with muslin cloth and sit over a bowl to drain for around 20 minutes.
4. Return to TM bowl and add your salt and whip with the butterfly until you have the desired consistency

Turned out great 👍🏼 I did add some butter when I blended it to make a richer flavour for a dessert 🍨 I needed it for. Will definitely use this recipe again
